Willow Helps Us Bake Blueberry Banana Bread On The Farm
Our camper van has an amazing little kitchen where we have cooked many delicious meals together – stirfries, slow cooked stews, and magnificent salads. But one thing we are lacking is an oven.
As we found ourselves on a blueberry and avocado farm over summer we made sure we made the most of the facilities. Inside the picker’s shed is a camp kitchen that includes a beautiful Falcon oven.

So on the rainy days when we weren’t picking blueberries it was likely we’d be cooking. On this particular day Willow had spent the morning outside keeping an eye on the avocado trees before she followed us into the kitchen to supervise our activities.
Steph was cooking blueberry banana bread with the limited equipment available to us – an activity that demanded Willow’s utmost attention.
The recipe is a basic banana bread with added blueberries and coconut in the mixture and sprinkled on top before baking (I’ve included the recipe at the bottom of this page).
But what does Willow think of Steph’s baking skills?
All in moderation, isn’t that right Willow?

Blueberry Banana Bread Recipe
Ingredients
- 2 cups plain flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup desiccated coconut
- 3/4 cup sugar
- 1/4 cup butter
- Three ripe bananas
- 2 eggs
- 1/3 cup plain yogurt
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh blueberries coated with 1 tablespoon flour
Method
Preheat oven to 180c.
In one bowl, combine flour, coconut, baking powder, and salt.
In another bowl add sugar, butter and beat until blended. Add mashed banana, eggs, yogurt, vanilla, and beat until blended.
Add flour mixture and beat in until combined.
Fold in blueberries then place mixture into baking paper lined and/or greased pan. Sprinkle an additional 1/2 cup coconut over top.
Bake for an hour or until toothpick comes out clean.
